摘要
从保鲜机理的角度,综述了抑制荔枝褐变的化学品、抑制荔枝水分散发和呼吸作用的化学品以及抑菌化学品在荔枝保鲜上的应用研究进展,提出缓释技术和复配技术是荔枝保鲜化学品的应用研究方向,并初步探讨了荔枝保鲜化学品与保鲜冷链构建的协同作用。
In this paper, chemicals which prevent lychee from getting brown, inhibit water emission from lychee and prevent bacteria from reproducing on lychee are summarized from the viewpoint of preservation mechanism, and it is recommended that delayed release and combination use of chemicals for preservation of lychee need further investigation. The synergetic effect of the chemicals for preservation of lychee and the cooling chain system for preservation of lychee is discussed as well.
