复方中草药添加剂对肉鸡肉质的影响 被引量:35

摘要 选取1日龄AA肉鸡180只,随机分为4个组,每个组设3个重复,每个重复15只鸡。A为对照组,饲喂基础日粮;B、C、D为试验组,分别在基础日粮中添加1%的复方中草药添加剂Ⅰ、Ⅱ、Ⅲ。结果表明,3种复方中草药添加剂都能不同程度地提高肉鸡的胸肌率、腿肌率、瘦肉率、系水力(P<0.05),降低腹脂率、滴水损失和烹煮损失(P<0.05),改善肉色(P<0.05),使肌纤维变细(P<0.05)。复方中草药添加剂对肉鸡屠宰率、全净膛率、半净膛率以及鸡肉pH值影响不显著(P>0.05),但有增加的趋势。3种复方中草药添加剂在改善肉质方面以复方中草药添加剂Ⅲ效果最好。 180 one day-old AA broilers were selected and divided randomly into four groups, each group with three replications and each replication with 15 broilers. Group A is the control group, in which broilers were fed with basal diet, while Groups B, C, and D are treatment groups, in which broilers were fed with basal diet with 1% complex additives Ⅰ, Ⅱ, and Ⅲ of Chinese herbal medicine respectively. Results showed that the three complex additives of Chinese herbal medicine can in various degrees enhance the percentages of breast muscle, leg muscle and total muscle as well as water holding capacity ( P 〈 0.05 ) , lower the abdominal fat percentage, dripping loss and cooking loss ( P 〈 0.05 ) , improve meat color( P 〈 0.05 ) and get meat fiber finer( P 〈 0.05 ). The additives of Chinese herb medicine have little effects on broilers slaughter percentage, whole and half net carcass percentages, and pH value of chicken ( P 〉0.05) , however, they tended to increase. The complex additive Ⅲ of Chinese herbal medicine was superior to others in improving meat quality.
