漳州市芗城区2000~2004年食品卫生监测分析

摘要 [目的]了解芗城区食品卫生现状,为今后食品卫生监督监测提供客观依据。[方法]对芗城区2000~2004年抽查的16类、2746份食品检测资料进行分析。[结果]总合格率为84.96%,标化合格率呈逐年增高趋势;生产单位合格率为85.40%,销售单位合格率为81.42%(P<0.01),豆制品、肉制品、冷食、酱腌菜的合格率较低;主要污染指标为细菌总数、大肠菌群、二氧化硫、过氧化苯甲酰、酸价、色素。[结论]各类食品合格率逐年提高,应加强对豆制品、肉制品、冷食、酱腌菜等的监督监测。 [Objective]To understand the current situation of food hygiene in Xiangcheng district and provide data for food hygiene supervision and inspection in the future. [Methods]Analysis was made on surveillance data from 2 746 food samples of 16 categories in Xiangcheng district during from 2000 to 2004. [Results]The total qualified rate was 84.96%, with a rising trend year on year in the standardized qualified rate. The qualified rate was 85. 40% and 81.4% in produetion and sales units respectively ( P〈0.01),with a tow qualified rate in bean products, meat products, cold drinks and snacks and pickles. The main contaminationindexes were total bacterial count, coil-group, sulfur dioxide, benzoyl peroxide, acid value and pigment. [Conclusion]With the year-on-year rise in the qualified rate of foods, inspection and surveillance should be strengthened on bean products, meat products, cold drinks and snacks and pickles.
