摘要 目的了解维吾尔族大学生膳食营养状况,为指导合理膳食提供理论依据。方法采用分层整群抽样法,在新疆3所大学分年级随机抽取班级,对所抽取班级维吾尔族大学生全部进行调查,共调查学生1 235名。结果维吾尔族大学生能量及营养素摄入量除铁以外,均低于推荐摄入量标准。能量的食物来源以碳水化合物所占比例偏多,蛋白质来源中豆类食品摄入量偏低。早、晚餐的营养素和能量摄入量均明显不足。维吾尔族大学生营养不良率男生为28.07%,女生为29.72%;肥胖率男生为14.14%,女生为13.31%。结论维吾尔族大学生的膳食结构不合理,营养状况较差。应合理搭配食物,全面增加各种营养素摄入量,以提高营养水平。 Objective To know the dietary, nutrition status of Uygur college students, and to provide bases for improving Uygur students' diets. Methods h cluster random sampling method was used to survey 1235 students from 3 universities in Xinjiang. Results The intakes of the nutrients and energy were lower than recommended in proportion in the nutrients of the food. The intakes of protein from the animal food and the bean food were also less than recommended. The energy and nutrients were obviously deficient. The prevalence rates of malnutrition were 28.07% for male and 29.72% for female, and the rates of obesity were 14.14% for male and 13.31% for female. Conclusion Uygur college students' dietary, construction is not reasonable, and their nutrition status is poor. Uygur college students should balance diets and increase the intakes of nutrients, so as to improve their nutritionstatus.
