摘要
金黄色葡萄球菌的检验在发酵食品检测中具有重要意义。该文介绍了金黄色葡萄球菌的各种快速检测方法的原理、研究进展,并对目前常用的各种快速检测方法在检测限、特异性、检测速度、简便性、检测成本、自动化程度等方面进行了比较。最后对金黄色葡萄球菌快速检测方法的发展方向及其在发酵食品生产企业中的应用进行了展望。
It is important to detect Staphylococcus aureus in fermented food. The principles and applications of different kinds of rapid detection methods of S. aureus were introduced in this paper. And the detection limit, specify, speed, simplicity, cost and automation of methods were also studied. The development of rapid detection methods and the application in fermented food industry were prospected.
