摘要
本研究对我国佛手瓜4个类型果实的营养成分与果实性状,包括糖、脂肪、氨基酸、维生素、蛋白质和人体必需的一些矿物元素(K,Na,Ca,Mg,Fe,Cu,Zn,Mn,P)及果实的商品性进行了测定分析。结果表明4个类型佛手瓜的果实中糖类、蛋白质、类胡萝卜素、K,Na,Ca,Mg,Fe等营养物质含量丰富,有较高的营养价值,两个绿皮类型维生素C含量略高于两个白皮类型。认为绿皮无刺类型营养价值更高,商品性更好,具有更大的发展潜力。
This paper deals with the nutrition composition and the charactehstics of the fruit of Chayote in China.The experimental results showed that:The nutrition material contents in thefruit of Chayote in China were rich and of higher nutrition value.The type of the green andsmooth epidern1is is of the highest nutritional and commercial value in the four tested types.Itis hence of more potentiality of development.
