ESL乳以其独特的生产工艺、较长的货架期及良好的口感,受到越来越多人的关注.本文介绍国内外ESL乳生产的基本工艺及陶瓷膜微滤除菌、离心除菌和CO2填充等技术在ESL乳生产中的应用.
Dairy products with extended shelf-life (ESL) have gained much attention for their particular processing technique, longer shelf life and perfect tastes. In this paper, the basic processing and several new technologies such as microfihration, adding CO2, centrifugal separation were introduced.
