摘要
研究了红花继木叶色素的提取条件和理化性质,结果表明,用料液比1∶40、pH1的80%乙醇作提取剂、在80℃恒温浸提40min,提取效率较好。红花继木叶色素属花青素类色素,pH值对色素影响明显,60℃以内比较稳定。光照能加快色素降解。金属离子Na+、Ca2+、Al3+、Cu2+、Zn2+对色素色泽无影响,而Fe3+、Pb2+有不良影响。色素的抗氧化能力较差而耐还原性能较好。蔗糖、葡葡糖和盐等添加剂对色素无影响。
Physico-chemical properties and extractions of the red pigment in leafages of Loropetalurn chinense var. rubrurns were investigated. Results showed that good yield of pigment could be obtained by 80% CzH5OH solution of pill at 80℃ for 40min with the solid- liquid ratio 1 : 40 g/mL. The Loropetalurn chinense var. rubrurns red pigment is classified to anthocyanins, for which pH had significant effect on the tone of pigment. The pigment is stable to heat under 60℃. Under sunlight,degradation of the pigment could be accelerated, but regardless of ultraviolet light. Metallic ions Na^+ , Ca^2+ . Zn^2+ . A^3+ , Cu^2+ had no effect on the tone of pigment, but Fe^3+ ,Pb^2+ had severe disadvantageous effect. This kind of pigment has better endurance capability against redcing agent, but it has less resistance capability against oxidizing agent. Addition of glucose,sucrose had no effect on the pigment.
