摘要
经浸泡的大豆用5种不同的方法处理,制浆。分离并鉴定豆浆中主要挥发性豆腥味物质中正已醛正己醇含量。实验结果表明,未结合热处理的二者含量较高(分别为0.98和0.15mg/kg),而其他结合热处理的4组样品含量普通较低,其中以用0.5%NaHCO_3溶液浸泡至适度,在沸水中作用5min,加水磨浆制样的含量最低(分别为0.14,7.5×10 ̄-4)mg/kg。
The sovbean was soaked and treated with 5 different methods.The level of n-hexanal and n-hexanol ofrnaIn volatile beaniness fraction in sovmilk was isolated and measured.Results showed that the content of n-hexanaland n-hexanol of control group without heat treatment wear higher(0.98mg/kg and 0.15mg/kg respectively)andother 4 samples with different heat treatment,the content were lower.Sample 3 was got the best result.
