摘要
以南瓜肉为原料,采用不同处理方法,进行3种制品加工工艺的探索研制.结果表明:通过对南瓜的适当处理,将其制成南瓜果脯、南瓜粉、南瓜脆片系列食品是可行的.
Based on analyzing the nutrition value and medicinal function of Cucurbita moschata fruit, the processing technologies for three types of Cucurbita moschata products by adopting different treatments to raw materials of Cucurbita moschata fruit were explored. It was showed by the results that it would be feasible to process serial foods including Cucurbita moschata preserves, Cucurbita moschata powder and Cucurbita moschata chips through adequate processing of Cucurbita moschata fruits.
