摘要
用改良的o-phthalaldehyde法对pH3.0和0.3%牛胆酸钠有一定耐受性的10株乳酸菌的体外降胆固醇活性进行了测定。这些菌在含0.3%胆盐的培养基中,37℃厌氧培养24h后,均表现出较强的降胆固醇活性。胆固醇脱除率从30.4% ̄43.6%不等。其中鸟肠球菌WZ38-2对胆固醇的脱除率最高;其次为植物乳杆菌WH13-1和WH23-1。
Cholesterol removal activity of 10 strains of LAB,which were tolerant to pH3.0 and 0.3% sodium taurocholate,was tested by the modified o-phthalaldehyde method. Cholesterol removal occurred the presence of 0.3% bile salt when the strains were incubated anaerobically for 24h at 37℃. The Cholesterol removal rate was from 30.4% to 43.6%. The highest was E. avium WZ38-2. The nexts were L. plantarum WH13-1 and WH23-12.
