摘要
研究了6种活性炭对草鱼蛋白水解物中氨基酸的吸附情况。发现AK-220型活性炭的静态吸附量最大,且吸附可使酶解液颜色和风味有良好改善;AK-220对芳香氨基酸(AAA)的吸附能力明显优于其对支链氨基酸(BCAA)的吸附程度,同时还可吸附一定数量的肽分子。
The absorption capacity of six kinds of activated carbon for amino acids in static state from Grass Carp protein hydrolysates were investigated. The results indicated that among these activated carbon, AK - 220 owns the largest absorption equilibrium value. The adsorption has made the color and the taste of the hydrolysates better. Besides, AK - 220 exhibits better performance in absorbing aromatic amino acids than branched amino acids. Meanwhile, AK - 220 can absorb some peptides. So far as the nutrition is considered , we conclude that the absorption of activated carbon can be an good method in the preparation of protein hydrolysates with the character of “More BCAA and Less AAA” in order to assisting in curing some special diseases.
