摘要
干冰是一种可用于食品工业的冷却剂,研究了固态干冰对低温肉制品快速冷却及保持低温环境的能力。结果表明,干冰能将温度相对较高的低温肉制品快速冷却到安全贮存的温度,并在一定时间内保持低温环境。
The dry ice could be used to food industry as refrigerant, the quickly cooling and holding low temperature abilities of which in the pasteurized meat production were studied in this article. The results indicated that dry ice could cool the upper temperature meat product to safe reserved grade, and the low temperature condition might be hold for a long time.
