摘要
抗性淀粉测定的方法主要有Englyst法、Berry法、S.A.法和Goni法,本文通过测定不同实验处理的大米抗性淀粉,对S.A.法和Goni法进行了比较研究。结果表明,Goni法比S.A.法具有重复性好,操作简单等明显优势。无论是S.A.法还是Goni法,酶消化处理及其反应的最适pH是影响测定结果的关键因素。
Resistant starch (RS) is determined mainly by the methods of Englyst, Berry, Siljestrom & Asp (S.A) and Goni. The methods of S.A. and Goni were comparatively studied through testing the content of RS in treated rice powder. Goni method showed great advantages in reliability and simplicity in operation compared over S.A. method. Enzymatic treatment and optimum pH for enzymatic reaction are key factors for both methods.
