摘要
以金黄色葡萄球菌和大肠杆菌为指示菌,分别从培养基成分和发酵条件确定了纳豆菌液体发酵产生的抗菌物质抑制金黄色葡萄球菌和大肠杆菌的最佳条件。并对抗菌物质的部分理化性质热稳定性、酸碱稳定性、金属离子的影响等进行了研究。结果表明,抗菌物质具有良好的热稳定性、酸碱稳定性,添加金属离子对抑菌效果有促进作用的有Ca2+,Al3+,Mg2+,Fe2+,而Cu2+,Mn2+,Zn2+则抑制抗菌物质的产生。
In this paper, Staphylococcus aureus and Escherichla coli were used as the indication-germ. Medium composition and fermentation conditions were investigated respectively, Then, the optimal conditions of Bacillus natto to produce antimicrobial substances by liquid fermentation methods were confirmed. The partial characteristics of anfimicrobial substances and the effects of ion composition on production of antimicrobial substances were also studied. The results showed antimicrobial substances have good heated stability and good stability of acid and alkali. When calcium ion, aluminum ion, magnesium ion and iron ion were appended into culture medium, antimicrobial functions would be enhanced, whereas cuprum ion, manganese ion and zinc ion would inhibit production of antimicrobial substances,
