摘要
以邻苯二酚溶液为底物,测定春小麦面粉中的多酚氧化酶,并从不同pH值、不同底物浓度、酶液浓度等方面研究春小麦面粉中多酚氧化酶活性的影响因素,结果表明以上测定指标对酶活性的影响非常明显。
Polyphenol oxidase of spring wheat flour was tested, using pyrolatechin as the substract, studying on the factors of polyphenol oxidase in spring wheat flour as follows: different pH, different substrate concentrate and different enzymatic concentrate. The result showed these items have obviously effect for PPO activity.
