摘要
为了解郑州市建筑工地食堂卫生状况,更加科学规范化管理该行业,于2004年10月~11月对郑州市58家建筑工地食堂的卫生设施及卫生管理情况进行了调查研究。结果表明,食品加工场所普遍存在的主要卫生问题是:加工场所大部分不密闭,达79.31%,现场加工炒菜呈暴露式,达13.79%,不具备相应的卫生条件而加工炒菜,达87.93%,缺少防蝇防尘设施,达86.12%。针对建筑工地食堂中突出的卫生问题,提出了一系列行之有效的措施,使城市建筑工地食堂卫生状况有很大改观,卫生管理逐渐走向科学化、规范化的管理轨道。
In order to understand the food safety situation of the workers of construction sites in Zhengzhou, the hygienic facilities and management situations of 58 restaurants of construction sites in Zhengzhou were surveyed from October to November, 2004, The results showed that sanitary problems were ubiquitously existed 79.31% of the food processing places were exposed to dusty out door. Processing operation rooms which did not have necessary sanitary conditions were up to 87.93%. The food processing sites which lacked of defence of flies and dustproof facilities reached 86.12%. To these food safety problems we put forward a series of corrective measures, which will improve the sanitary state of the restaurants of construction sites of the city and better their management.
