摘要
研究了红茶中的有效成分咖啡碱在水中的溶出特性,以及茶叶粉碎度、料液质量比、浸提温度、浸提时间、提取液pH值、微波功率、微波作用时间等因素对咖啡碱溶出效果的影响,通过正交实验,对微波辅助萃取红茶中咖啡碱的工艺条件进行了研究.结果表明,茶叶不粉碎,料液质量比1∶30,浸提温度90℃,浸提时间30 min,提取液pH值为6,微波功率350 W,微波作用20 s,红茶中咖啡碱的浸出率可达3.90%以上.
This paper studies the solubilization characteristics of caffeine in black tea. The effect of the grinding degree, the ratio of solid to liquid, the extraction temperature, the extraction time, the pH value of the extraction liquid, the microwave powder, the microwave treatment time on the solubilization characteristics of caffeine in black tea were tested. Microwave-assisted extraction process for the caffeine from the black tea was studied by the orthogonal experiment. The result of quantitative analysis of the extracting rate of caffeine indicates that the extracting rate of caffeine in black tea was more than 3.90% under the condition is: the tea not be grinded, the ratio of solid to liquid was 1.30, the extractiontemperature was 90 ℃, the extraction time was 30 min, the pH value of the extraction liquid was 6, the microwave powder was 350 W, the microwave treatmenttime was 20 s.
