竹笋贮藏过程中木质素变化以及调控研究现状 被引量:7

摘要 对竹笋木质素合成的基本情况调查发现,竹笋中木质素是导致竹笋老化及影响其品质的重要原因,同时对竹笋采后贮藏过程中木质素变化及调控研究也作一阐述。 The research of biosymthesis of lignin showed that lignin is the main factor contributing to the aging and quality change of bamboo shoots, So this paper summarized the development of the reseach on the changes of lignin and the way controlling lignin biosynthesis in bamboo shoots during preservation.
