摘要
在对物料内部传热传质研究的基础上,建立了干燥过程中土豆内部传热传质的数学模型。传热模型考虑了水分蒸发对内部温度场的影响,在求解内部传热传质模型的过程中,还考虑了物料收缩对内部水分扩散和热扩散的影响。模拟所得内部温度变化与实测的内部温度场非常接近,模拟所得的水分分布是用平均水分验证的,误差也很小。
A mathematical model of simultaneous heat and moisture diffusion in potato was pro-posed.The model took into account the effects of moisture evaporation on the temperatureprofile,the effects of potato shrinkage on the heat and moisture diffusion were also consid-ered in the simulation program.A finite difference method was used to solve the diffusionequations.The simulated temperature profile was well agreed with the experimental results.The simulated moisture profile in the potato was testified by the average moisture content ofthe sample.
