摘要
利用60Coγ射线辐射加工技术进行大豆蛋白辐射灭菌研究,研究了辐射剂量对大豆蛋白卫生学质量、理化指标、功能性和感官等的影响.研究结果表明,大豆蛋白产品经适宜的辐射灭菌剂量处理后,产品不仅保持了原有的各项理化指标、良好的功能性和感官的同时,而且卫生学质量得到大幅度提高,各项指标均符合企业产品质量标准.
Make use of the ^60Coγ ray radiation processing technology to carry on study of the irradiation sterilization effect of soybean, It conclude the radiation dose relationship with soybean hygiene quantity, physics and chemistry index, functions and sense as well. The results demonstrated that soybean is after irradiation with proper radiation dose, it not only keep originally possessed various physics and chemistry index signs, good functions and sense at the same time, and the hygiene quantity get the significant exaltation, various index signs all can match the enterprise product quantity standard.
