摘要
采用聚醚砜膜超滤、羧甲基-纤维素离子交换层析对牛乳酪蛋白的酶解物进行分离,用高效凝胶排阻色谱测定酶解物中降血压肽的分子质量分布。结果表明:酪蛋白的酶解物经超滤层析分离,得到的ACE抑制率为86.36%的组分,经高效凝胶排阻色谱测定样品中至少含有6种分子量在1500u以下的多肽物质。
Hydrolysate of casein was isolated by ultrafiltration membrane （PES）and CM-cellulose column, molecular weight was measured by high performance size exclusion chromatography（HPSEC）. The results showed there were at least six kinds of peptides in the isolated hydrosate which ACE inhibition rate was 86,36%. The molecule weight was under 1500.
