摘要
应用分光光度法测定面粉中增白剂过氧化苯甲酰的含量,过氧化苯甲酰把Fe2+氧化为Fe3+,Fe3+与邻菲罗啉发生褪色反应,结果表明,褪色反应与过氧化苯甲酰含量在0.1-0.5 mg/mL呈线性关系,线性回归方程为△A=0.444 C+0.0057,r=0.9946。
The content of bleaching agent of benzoyl peroxide (BPO) in flour is studied by spectrophotometer basing on the theory that Fe element would be oxidized by BPO from Fe^2+ to Fe^3+ , which would be discolored by 1.10 - Phenanthroline. It is proved that the relationship between the discoloring reaction and BPO content in 0.1 - 0.5 mg/mL is the linear regression of △A = 0.444C + 0.0057 in 0.1 - 0.5 mg/mL (r=0.9946).
