摘要 对元宝枫种子蛋白主要功能特性的测定,研究结果表明:元宝枫种仁蛋白的等电点为4.38;在等电点附近,种仁脱脂粉的溶解度,起泡性、泡沫稳定性及乳化稳定性均最低,而当pH=6~7时,表现较佳;与大豆脱脂粉相比,元宝枫种仁脱脂粉具有更好的吸油性。 The main functional properties of the seed protein of Acer truncatum were determined to provide scientific basis for exploiting the seed protein resources.The results showed that the pH value of the seed protein was 4.38, under which the solubility,foamability,foam stability and emulsifying stability of the de-fatted kernel powder presented the lower value,however,these properties achieved very good results when the pH value was in the range of six to seven.Comparing with the de-fatted soybean powder,the oil absorbability of the de-fatted kernel powder and the foamability of the protein isolate of the Acer truncatum seeds were much higher.
