摘要
猕猴桃果实组织和部位的各特性参数呈现出差异性,其中外圈果肉和内圈肉囊组织的流变特性参数差异极显著,上、中、下3部位的差异不显著;肉囊组织结构不均匀,流变特性参数的离散性比果肉组织大。运用TA-XT2i质地分析仪对猕猴桃开展了压缩—应力松弛特性的研究。此试验研究为猕猴桃的流变特性分析和品质评价奠定了基础。
Author made stress-relaxation tests on kiwifruits using texture analyzer of TA-XTi. All characteristic parameters were showed differences in kiwifruit's tissues and sections, and the difference between outer flesh and inner flesh was specific, but that among upper, mid and underside section not. The inner flesh was more asymmetric, and its discreteness was greater than outer flesh's. The research made some foundations for kiwifruit's archeological analysis and quality inspection.
