摘要
选用中性蛋白酶和胃蛋白酶水解鸡脑蛋白,确定最佳水解条件为:先采用中性蛋白酶于50℃,pH7.0,加酶量0.8U/mg蛋白质,底物浓度0.5%,水解4h;再用胃蛋白酶于40℃,pH1.0,加酶量8U/mg蛋白质,水解3h。在该条件下,肽得率为70.38%,水解产物的氨基酸含量为2.01%,10kDa分子量以下的肽含量为47.72%,3kDa分子量以下的肽含量为40.14%,1kDa分子量以下的肽含量为29.03%。
