Study on the chicken's cerebroprotein hydrolysate

摘要 选用中性蛋白酶和胃蛋白酶水解鸡脑蛋白,确定最佳水解条件为:先采用中性蛋白酶于50℃,pH7.0,加酶量0.8U/mg蛋白质,底物浓度0.5%,水解4h;再用胃蛋白酶于40℃,pH1.0,加酶量8U/mg蛋白质,水解3h。在该条件下,肽得率为70.38%,水解产物的氨基酸含量为2.01%,10kDa分子量以下的肽含量为47.72%,3kDa分子量以下的肽含量为40.14%,1kDa分子量以下的肽含量为29.03%。 Chicken's cerebroprotein hydrolysated using neutral The optimum condition for two enzymes is hydrolysis at 0.8U/mg protein, pH7.0 is enzymatically protease and pepsin. the hydrolysis by the with neutral protease and 50℃ for 4 hours, the substrate's concentration was 0.5% and then with pepsin at 8U/rag protein, 40℃ and pill.0 for 3 hours. The peptide,amino acid,peptide of molecular weight below 10kDa, 3kDa, lkDa are 70.38%, 2.01%, 47.72%, 40.14%, 29.03% respectively.
