摘要 用羧甲基淀粉对猪血红蛋白酶解液进行脱色处理,比较羧甲基淀粉用量、pH值、脱色温度和吸附时间等因素对脱色效果的影响。结果表明:在pH值为4、2%CMS用量、常温下吸附60min时猪血红蛋白酶解液的脱色效果明显,测得其冷冻干燥产品的总游离氨基酸含量为68.27mg/100g。 The effects of carboxymethyl starch eontent, pH, temperatures, and adsorption times on decolourization of porcine hemoglobin hydrolysate by enzyme were studied in this paper. The results showed that optimum discolouration conditions were followed: 2% carboxymethyl starch, solution pH value of 4. 0, room temperature, and adsorption time of 60min. Under above conditions, the freezing- dried product eontains total amino acids of 68. 27mg/100g.
