摘要
研究了食品乳化剂二乙酰酒石酸甘油单、二酸酯的制备,分析了其组成和质量指标,并作了面包焙烤试验。
The synthesis of diacetyltartaric acid esters of mono-and diglycerides (DATEM) was studied. The composition and quality indexes of the DATEM product were analysed. The baking effects were also tested.
