摘要
本文研究了以山药为主要原料的保健饮料的制作工艺,通过正交试验确足最终产品配方为山药原汁:水=1:10、木糖醇5%、蛋白糖0.7‰、甜蜜素0.7%0、CMC(羧甲基纤维素钠)2%、均质压力30Mpa、85℃杀菌10min。产品酸甜适口,营养丰富,具有一定的保健功能。
This paper introduced the processing technology of health beverage, which used yam as majority material, the technological parameters formula of health beverage in terms of perpendicular test. were determined as follows: yam:water= 1:10, xylitol 5 %,aspartame 0.7‰, sodium cyclamate 0.7‰, CMC 2%, homogenization pressure30Mpa, seterilization temperature and time 85 ℃ and 10min.The product is tasteful and nutritious, it has the health care function.
