摘要
测定了山西省临汾市郊区六种常食野菜荠菜、反枝苋、蒲公英、地肤、马齿苋、藜的粗蛋白、粗纤维、维生素C、胡萝卜素、硝酸盐和亚硝酸盐含量。结果表明,反枝苋、荠菜、地肤的粗蛋白含量较高,反枝苋、藜的维生素C含量较高,蒲公英、反枝苋的胡萝卜素含量较高,反枝苋、马齿苋的硝酸盐、亚硝酸盐含量较高。
Through mensurating the contents of the coarse protein, coarse cellulose, vitamin C, carotene, nitrate and nitrite in Capsella bursa-pastoris L, Amaranthus retroflexus L, Taraxacum mongolicum Hand Mazz, Kochia scoparia (L.) Sxhrad, Portulaca oleracea L, Chenopodium album L, which are the six ordinary wild vegetables in the suburb of LinFen, ShanXi. Showed that Arnamnthus retroflexus L, Capsella bursa-pastoris L and Kochia scoparia (L.) Sxhrad are rich in coarse protein; Amaranthus retroflexus L and Chenopodium album L are rich in vitamin C; Taraxacum mongolicum Hand Mazz and Amaranthus retmflexus L are rich in carotene; Amaranthus retmflexus L and Portulaca oleracea L are rich in nitrate and nitrite.
