摘要
研究了用酶解法提取榛子仁油的工艺,并通过正交试验对工艺进行了优化。结果表明,酶解提取榛子仁乳液油的最佳工艺为:酶用量1 500 IU/g,pH7.0,温度45℃,在离心速率为3 000 r/min的搅拌下酶解2 h,榛子仁油的提取率为89.70%。
The technonlgy of extracting filbert kernel oil by enzymatic hydrolysis method is studied. It is optimized by orthogonal experi technology is 1 500 IU/g of enzyme quantity, zing 2 h,and the rate of filbert kernel oil can ments. It is proved that the best condition of the pH7.0,45℃,stirring at 3 000 r/min and hydroly- reach 89.70%.
