摘要
针对酸奶中缺乏膳食纤维的情况,阐述了在酸奶中添加苹果渣膳食纤维的必要性,研究了苹果渣中的可溶性膳食纤维(SDF)的含量情况,讨论了在酸奶中添加苹果渣SDF的量为4g/100g时,可以取得良好的效果。
The necessity of adding soluble dietary fiber from pomace to yogurt was discussed.The contents of soluble dietary fiber in pomace were determined.The results showed that the optimal adding content of dietary fiber from pomace is 4 g / 100 g.
