摘要
超高压技术是食品和农产品加工的高新技术之一,在果蔬产品、蛋白质产品、乳制品、肉制品、速冻食品、水产品等加工中有着广泛应用。我国在运用超高压技术方面尚处在起步阶段,有着广泛的发展空间。
As one of the new high processing techniques for food and agricultural products, superhigh pressure technology finds wide application in processing fruit and vegetable products, protein products, dairy products, meat products, quick- frozen products, aquatic products and etc. At present the pressure technology in our country is still at the beginning stage and has a very broad space for its development.
