摘要
消泡剂在面包酵母生产中有着特殊作用。研究了4种不同类型消泡剂对面包酵母发酵产量和酵母活力的影响,发现烷基脂肪酸酯的消泡效果最好。在此基础上,分析比较了3种消泡剂流加方式的应用情况。结果表明,发酵罐底部雾化流加方式能使消泡剂分布均匀且用量少,适合面包酵母大规模生产。
Antifoam plays a special role in baker's yeast production. In this paper the effects of four different antifoams on yeast yield and yeast acivity were studied. The results suggested that alkoxylated fatty acid ester worked best.Then the three feeding models of antifoam were compared by their efficiency and consumption. The results indicated that the way to feed atomized antifoam at the bottom of fermentation pot was the best choice to large-scale yeast production because it could distribute antifoam equally and the consumption of antifoam was the lowest.
