摘要 抗性淀粉RS3是抗性淀粉其中的一类,是目前研究的热点。综述了RS3的形成机理及其影响因素,以便更好地指导生产。 Resistant starch Three which is a kind of resistant starch is now studied by researchers from different countries. This paper summarizes the forming mechanism and influencing factor to instruct production.
