摘要
研究了西芹的干燥过程,考察了实验的预处理时间、预处理温度、干燥温度、风量、形状、装载量等不同因素对干燥过程的影响。结果表明,西芹干燥具有典型的物料干燥升温、等速、降速三个阶段,提高干燥温度与风量,对强化干燥过程有利。较好的干燥工艺条件是:西芹薄片在90℃热水中烫漂3 min,干燥风温80℃、风量0.021 m3/s(1.34 m/s),物料为薄而双层。干燥方程符合Page模型。
The dehydration process of west celery was studied in this paper. The effects on the drying process by such factors, including the pretreatment time and its temperature, the drying temperature, the wind rate, the shape and the capacity, were investigated. The experimental results show that the west celery drying process drying rate and fall drying rate the three typical drying temperature is favorable to strengthen the appears drying temperature increasing, constant periods, and that to increase the wind rate and drying process. The better drying processes conditions: precooking with 3 minuets in the 90"C water, 80"C drying wind, 0. 021 cubic meters per second wind rate, the thin and double layers material. The dry equation accords with the so-named Page model.
