摘要
白酒浑浊沉淀现象有白色浑浊、絮状物沉淀、白色针状结晶、棕色沉淀、淡黄色沉淀、蓝色沉淀、烟雾状浑浊等;引起沉淀的原因有水的硬度、水中腐殖质、酒基、贮酒容器、输送管道及过滤设备、使用香精、香料等问题。解决措施:对水质进行软化、过滤后使用;对酒基进行预处理;使用不锈钢容器和管道;使用符合国标的香精、香料等。
Liquor turbidity and precipitate include white haze, floeeulent precipitate, white needle-shaped, crystal, brown precipitate, faint yellow precipitate, blue precipitate and smoky haze etc. The reasons of liquor turbidity include water hardness, humic substances in water, base liquor, liquor containers, transfer piping, filtration equipmeat, and the use of perfume etc. The relative solutions cover the followings: softening of water and water used after filtration, pretreatment ofbase liquor, use of stainless containers and pipes, and use of perfume in line with international standards etc. (Tran. by YUE Yang)
