摘要
苦荞麦是世界稀有粮食物种之一。它含有多种氨基酸、微量元素、维生素及独芦丁素,具有延缓衰老、开胃健脾、降血脂之功能。应用小曲糖化、高温曲发酵,采用黄酒回沙的方法,适当延长发酵期,可赋予苦荞酒特殊的香气和风格。
Tartary buckwheat, as one of the rare grain species in the world, contains multiple amino acids, microconstituents, vitamins and etc., and it has the functions of prolonging life, stimulating the appetite, and reducing blood fat. The techniques such as Xiaoqu saccharification, high temperature Daqu fermentation, return the fermentate, and proper prolong of fermentation period could give tartary buckwheat wine special aroma and wine style.
