摘要
研究了玉米黄色素的理化性质,该色素对氧化剂、光、热极不稳定,对Al3+、Fe3+等离子稳定性较差,但对酸、碱、还原剂、食品添加剂及Fe2+、Zn2+、Na+、K+等离子较稳定。
The stability of yellow pigment from corn barn was inverstigated in this paper. The results showed that it was very sensitive to oxidant, light and heat. It is unstable in Al^3+,Fe^3+ and so on, but stable in acid, alkali reductive, food additives and some ions.
