摘要
用正交试验优化了提取炮仗花色素的工艺条件,最优的提取工艺条件为:以乙醇为提取剂,炮仗花与提取剂按1∶30g/mL比例投料,在80℃下保温提取3h。并研究了温度、pH值、光照、氧化剂、还原剂及食品添加剂等因素对炮仗花色素稳定性的影响,结果表明,炮仗花色素除在Na2SO3、强酸及强碱等环境中稳定性较差外,其它条件下均具有良好的稳定性。
The extraction conditions of pigment from Pyrostegia ignea were discussed and the optimum extraction conditions were determined by orthogonal test. The result of orthogonal test showed that the optimum ex- traction condition were: extraction solution of ethyl alcohol, the ratio of materials was 1:30(g/mL), extracting at 80℃ for 3h. The stability of Pyrostegia ignea pigment was discussed under the different conditions such as temperature, pH, light, oxidation, reductive and food additives. The results was that reductive, strong acid and alkali would harmfully affect the stability of the pigment, and the pigment had fine stability with others conditions.
