摘要
对肉制品加工中常用的防腐剂、抗氧化剂、增稠剂、颜色保持剂和香精香料等主要添加剂的研发应用现状进行了综述,并对其发展趋势进行了介绍和展望。
The application of presservatives, antioxidants, thickener, pigment, essence and flavor in meat products were summarized. And the development trends of those additives were also introduced and predicted in this paper.
