摘要 利用表面等离子体共振(SPR)生物传感技术进行食品的快速检测,具有无需标记、前处理简单、特异性好、灵敏度高以及能实时、连续监测生物分子动态反应过程等特点.详细论述了SPR生物传感技术在食品安全检测中的农药残留、细菌、病毒、重金属和糖类的快速检测的研究进展,并指出了其发展趋势. Using Surface Plasmon Resonance (SPR) technology on monitoring the bio-molecular reaction is a leading measurement technology which has been initially applied in the field of food safety. It has the advantages of being free label, simple pre-treatment, specificity, high sensitivity real-time and continuous monitoring of bio-molecular dynamic characteristics of the reaction process. This paper expounds the recent research advancements and trends of surface plasmon resonance biosensor technology used in food safety including its principle and sensitivity improvement. An important significance of application on monitoring the pesticide residues, bacteria, viruses, heavy metals and carbohydrate fast in food safety is given.
