摘要
文章介绍了从节肢动物(如昆虫类、甲壳类及其他动物)的外壳以及低等植物(如真菌、藻类)的细胞壁中提取甲壳素的方法。甲壳素脱乙酰基即可制取壳聚糖。由于壳聚糖具有良好的成膜、拉丝性能,且壳聚糖无毒、无味,再进一步用壳聚糖与淀粉按一定比例混合、糊化,制成可食性淀粉—壳聚糖合成薄膜。实验结果表明,当二者以1:1比例混合时,糊化后制得的合成薄膜具有良好的柔韧性和水溶胀性。来文初步探讨了壳聚糖一淀粉合成薄膜的性质及其在食品工业和其他行业中的应用。
The Chitin was extracted from the crusts of arthropods (e. g. insects,beetles,etc. ) and from the cell walls of lower plants (e. g. fungi and algae ). After the acetyl is isolated from chitin the chitosan is prepared. The chitosan has the properties of forming film and drawing thread, no toxicity and taste. It was mixed with starch together in a certain ratio and then dextrinised. Finally the eatable synthetic film of chitosan-starch was prepared. The results showed the synthetic film which was made of the mixture of chitosan and starch in the ratio of 1:1 and dextrinised has good flexibility,water expansibility and water solubility. The property and application of the synthetic film of chitosan-starch in the food industy was discussed preliminarily.
