报道了甜椒红色素的提取工艺的选择和它的物理化学性质。该色素是一种油溶性天然色素;最大吸收峰是455nm;稀溶液呈橙红至红色;耐光性、耐热性、耐酸碱性好,是一种比较理想的天然食用红色素。
This paper describes the extraction techniques of red pigment from the green pepper and its physicochemical properties. The pigment is a natural pigment of soluble oil. Its maximum absorption peak is 455nm. Its thin solution is orange or red. It has resistance to light, to heat and to acid. So it is an ideal natural edible pigment.
