摘要 食品营养强化在提高人们营养水平方面发挥越来越重要的作用。该文综述了各类主要食品营养强化剂的功能及其应用;介绍了食品营养强化剂的研究进展,包括发展现状、安全使用问题以及最新研究动态等。 Fortified food plays a more and more important role in improving thenutritional level of people. This paper summarizes the function and application of themain nutrition fortifiers and introduces the research development of nutrition fortifier, including current developing situation, the safety problems and the latest researchdynamie.
