摘要
近年来,食品安全问题越来越引起人们的重视。由于蛋白质芯片能够在一次实验中对大量样本中的目的蛋白质同时进行检测,这一技术已引起人们的很大兴趣。蛋白质芯片在食品安全的检测方面有着很大的潜在价值,本文中作者就蛋白质芯片的基本原理、技术特点以及其在食品安全中的应用近况进行综述。
In recent years, people have come to pay more attention to food safety. As certain protein can be detected by protein microarrays in a great number of samples at one time, this technology has attracted much attention of researchers. Protein microarrays are of great much potential value in the analysis of food safety. In this paper, the researcher review the principle, technological characteristics of protein microarrays, and their current application in food safety.
