壳聚糖对甘蔗汁澄清效果的研究 被引量:13

摘要 处理后的甘蔗汁在520nm处有最大吸收波长。用壳聚糖对甘蔗汁进行澄清试验,结果表明,壳聚糖用量为0.4g/L ̄0.7g/L,pH2.5 ̄4.5,温度35℃ ̄55℃时的工艺条件处理甘蔗原汁时,甘蔗原汁的透光率能达到80%以上,甘蔗原汁中的可溶性固形物Vc含量基本不变。正交试验显示,壳聚糖对甘蔗汁的最适工艺条件是壳聚糖用量为0.6g/L,温度为45℃,甘蔗原汁pH为4.5。 Processed Sugarcane juice has the longest absorbing wave length in 520 nm.The results of the study of clarification of Sugarcane juice by means of chitosan showed that light transmittance was over 80 % and the amount of soluble solid content and Vc was remained almost unchangeable when the amount of chitosan was at 0.4 g/L-0.7 g/L,the temperature at 35 ℃-55 ℃ and the pH at 2.5-4.5.After the orthogonal trial, the opti mum technological conditions for Sugarcane juice clarification by using chitosan were 0.6 g/L, 45℃ and pH 4.5.
