摘要
综述了膳食纤维的类型、生理特性(发酵性、膨胀性、持水性、吸附性、离子交换作用)与功能(降低血液胆固醇含量、控制血糖、促进肠胃蠕动、清除人体内的有害物质),并介绍了膳食纤维的提取工艺和改性技术,及其在食品工业(主食、焙烤食品、饮料和乳制品等)中的应用。
The article reviewed the physiological characteristics of dietary fiber including fermentation character, distensibility,water holding capacity,absorbability and so on,and functions of dietary fiber,induding reduing the content of cholesterd in blood,controling blood sugar,acalerating the stomach and intestines peristalsis,weeding out harmful substance in vivo. The extraction method, modification technology and the applications of dietary fiber in food industry were also described.
