魔芋中多糖提取技术及含硒形态研究 被引量:15

摘要 研究了魔芋中硒的赋存形态、分布及含硒多糖的提取分离技术。用不同的浸提液和浸提方法(热水、稀酸、稀碱、超声波)提取魔芋中的多糖,用水作为提取剂提取魔芋中的蛋白质,并用原子吸收法测定它们各组分中含硒量。魔芋中的总硒含量为2.540μg/g,而多糖硒的含量为2.241μg/g,占了总硒的88.23%,说明魔芋中的多糖硒为硒的主要赋存形态。同时通过实验可知,魔芋多糖的最佳提取剂为稀碱。 The combined forms and distribution of selenium as well as polysaccharide extraction technology were studied in this paper, Different solvents and methods were used to extract polysaccharide and protein in A morphophallus konjac. Selenium contents were detected by atomic absorption spectrometer. The result showed that the total selenium in A morphallus konjac was 2.540 μg/g, and the selenium in polysaccharide (2.241 μg/g) was the main form storing in A morphophallus konjac, accounting for 88.23 % of total selenium. It was concluded that the best extract solvent of polysaccharide was dilute alkali.
