摘要
结合国内外果汁澄清方法和机理,对果汁澄清的技术特点和应用进行了系统阐述,并展望了果汁澄清技术的未来发展趋向。
Fruit juice is one of the functional nutrition drinks, which is favored by customer because of its excellent color, abundant nutrition and delicious flavors. However, haze is one of the unsolved problems in the process of clarified fruit juice and has been the technical barrier of development of syrup industry. Basing on previous studies, the article systemically summarizes the various clarified techniques and their application, and views the future development of syrup clarified technique to provide references for better application.
